I'm not sure how these tools came to be called "monkey wrenches" - which is
common vernacular - but from plumbing work, I know them as a 'union
wrench'.
That is, they're used to torque the nut in a pipe union. Unlike pipe
fittings, union nuts have big flats on them, and they're not designed to be
torqued with a standard pipe wrench that tends to crush the workpiece.
