Thanks Jim & Roy, for the advice!

I think I'll start with Roy's variac-and-low-voltage-tranformer idea.
I have a few used low voltage transformers I removed from old solid-state
gear. I never would have thought to use them together to make a
variable bucking transformer. Sweet!
